Red Velvet Cake

I love baking. It is one of the things I really enjoy after writing :). I usually make cupcakes and other bakery items but this was the first time I made an initiative to make a cake at home. It was my first attempt and it went really well.

ON YOUR MARKS

Prepare

  • Two Bowls
  • Spatula
  • Offset spatula
  • Spoons
  • Measuring Cup
  • Electric Mixer
  • 9″ round cake pan
  • Wire rack
  • No KIDS

GET SET

Cake Batter Ingredients

  • 2.5 cup Flour
  • 1.5 cup Caster sugar
  • 1.5 cup Oil
  • 2 Eggs
  • 1 tsp Vanilla essence
  • 1 cup Buttermilk
  • 2 tsp Cocoa powder
  • 1 tsp Salt
  • 1 tsp Baking soda
  • 1 tsp Vinegar
  • 2 oz ( 4 tbsp) Red food coloring

If you don’t know where to find buttermilk, you can even make it at home. In 1 cup milk add 1 tsp vinegar and leave it for few minutes. This is separate from the additional 1tsp vinegar that the recipe requires.

Viola!! Buttermilk’s ready!!

Frosting Ingredients

  • 1.5 cup Whipping cream
  • 2 cup Icing sugar sifted
  • 1/2 cup Butter
  • 8oz Cream cheese
  • 1 tsp Vanilla essence

BAKE

Cake on the go

  • Preheat the oven to 180 degrees.
  • Mix the dry ingredients and and wet ingredients in separate bowls
  • Add the dry ingredients little by little in the wet ingredients bowl and combine.
  • Bake it for 30 minutes or until a skewer inserted in the center comes out clean.
  • Let it cool for 30 minutes on the wire rack.
  • Add the Frosting:
    • In a large bowl beat the whipping cream at a medium speed with an electric mixer for 2 minutes until fluffy.
    • Add the icing sugar and butter and beat a little more.
    • Add the cream cheese and vanilla essence and beat for 30 seconds.
    • Its ready!
  • Cut the uneven rising of the cake to make it flat.
  • Add the frosting with the help of an offset spatula.
  • Add the red velvet crumbles for garnishing.

I prepared this cake for my 4th wedding anniversary. Hard work really paid off well.
